Indonesia is estimated to produce 18.3 million cassava in 2020. Cassava
manufacturing facilities are located in 13 regions across Indonesia. The
top five cassava-producing provinces are Lampung, Central Java, East
Java, West Java, and DI Yogyakarta
Cassava / cassava is a rice alternative that contributes significantly to a
region’s food security. Cassava development is critical in efforts to
provide non-rice carbohydrate food, diversify or diversify local food
consumption, develop product processing industries and agro-industry,
and generate foreign exchange through exports, as well as efforts to
support increased food security and food independence. Another
advantage of the cassava plant is that it converts the most solar energy
into dissolved carbs per unit area. Cassava has significant potential as
the most promising crop for food security since it can grow all year, even
on ground with limited nutrient supply, and it is drought tolerant.
Mocaf is cassava flour that has been changed through fermentation with lactic acid bacteria. The fermentation process alters the properties of the flour, allowing it to be used as a raw material for a variety of healthier and more nutritious food products that are gluten-free, high in fiber, and low in sugar, making them safe for consumption by people with diabetes, autism, and celiac disease.
